The Unofficial-but-Close-Enough Jordan Pond Popover Recipe*

Back in 1895, Nellie and Thomas McIntire bought a Maine farmhouse overlooking the clear waters of Jordan Pond. On their wide green lawn, they served tea and towering popovers to well-to-do summer travelers. In 1928, J. D. Rockefeller purchased the land and later donated it to Acadia National Park. The lawn remains. The view remains. And the popovers? Still iconic.

While the original recipe is famously guarded, this version comes deliciously close.

Makes 6–8 large popovers.

What You’ll Need

4 large eggs
2 cups whole milk
2 cups all-purpose flour, sifted
½ teaspoon kosher salt
Pinch of baking soda
2 tablespoons melted butter

Let’s Make Them

Start with a hot oven (and a hot pan).
Preheat your oven to 425°–450°F. Place your popover pan (or a muffin tin) in the oven while it heats.
Whisk the batter.
Beat the eggs for about 2–3 minutes until slightly frothy. Slowly pour in the milk, then add the flour, salt, and baking soda. Mix just until combined. The batter should be smooth but not overworked.
Fill the cups.
Carefully remove the hot pan from the oven and grease it generously with butter or spray. Pour the batter into each cup, filling them about halfway to three-quarters full.
Bake.
Bake at 425°–450°F for 15 minutes. Then, without opening the oven door, reduce the temperature to 350°F and bake another 15–20 minutes. The high heat creates the lift; the lower heat helps them set inside.
Resist the urge to peek.
Do not open the oven door while they bake. The steam inside is what makes them puff and keeps them tall.

Serve immediately with plenty of butter and strawberry jam.

A Few Tips for Sky-High Popovers

Room temperature matters. Cold eggs or milk will slow the rise. Let them sit out a bit before mixing.
Heat is your friend. A properly preheated pan jump-starts the puff.
No peeking. Steam is everything here. Let the oven do its work.

My Thoughts

Chase the Light by Suzanne Woods Fisher transported me to Acadia National Park. I like the author’s friendly writing style. I appreciated the list of characters at the beginning of the book (a good reference). I love Maisie who is fifteen years old and has a crush on self-centered and dull-witted, Frankie. Maisie is in for a learning experience and maybe a little excitement. The story features a treasure hunt, saving a newspaper, romantic interests, family drama with a shocking secret, and several other mysteries. I felt for Scout Johnson who was endowed with an unsuitable name and a Southern mother who was determined to interfere in her life. I wish Scout’s reaction to the tall and handsome, Naki Dana had been more mature instead of on par with Maisie’s crush on Frankie. Chase the Light is the second National Parks Summers novel, and it can be read on its own. The ending of Chase the Light left me smiling.

“Gardening is a way of showing that you believe in tomorrow.” Amish proverb

Whenever I visit my Amish friends, I always make a point of wandering out to their vegetable gardens to see what’s growing. Their gardens, usually not far from the kitchen, are bigger than most people’s backyards. Gardens, for the Amish, are a family affair. Husbands help their wives ready the soil and add the homebrewed fertilizer (ahem, manure), children help their moms plant, weed, and harvest.

Like so many parts of the Plain life, their value of the home garden—for the sake of nutrition, for sustenance, for well-being—is a wonderful example to those of us who weren’t farm-raised. They’ve been living a sustainable life filled with fresh, locally grown fruits and vegetables for over four hundred years. The rest of us are just catching on.

One Amish mom told me a story about her daughter, the youngest of seven. “This girl was a born worrier. Whenever she started on her worry loop, I would send her out to weed in the garden. When she came back in, her worries were gone. There’s just something about weeding that helps a soul settle down.”

I could expand that thought a little further. There’s just something about gardening that helps a soul settle down.

So, it’s late on Saturday and I just wrapped up a very long week. I spoke at three book events and finished the first draft (the drafty-draft) of a novel. I can’t stop thinking about the novel. Is it a mess? As tired as I am, tonight I don’t think I’ve got one more word in me—not to speak, not to write. I’m spent! Done. My husband is out for the evening, so I had a few hours alone at home to relax.

What did I do?

I planted in my garden: lettuce and radishes and carrots. As I dug in the spongy soil, I could feel my soul settle. Worry and exhaustion slipped away as I scattered seeds into furrows. Little by little, that wonderful God-given sense of re-creation returned. Tomorrow, I would write again. Time spent in my little garden does that for me. It renews me and gives me a hope for the future.

Or, at the very least, a good salad.

Overnight Blueberry French Toast

On a sunny July morning, we were served this breakfast dish at an Amish friend’s home and my husband couldn’t stop talking about it. You might be shocked at the amount of eggs, but don’t skimp! It’s worth every bite.

12 slices bread cut in 1” cubes

8 oz. cream cheese cut in ¾” cubes

1 ½ cup fresh or frozen blueberries

12 eggs

1/3 cup maple syrup

2 cups milk

Place half the bread cubes in a 9×13 baking dish. Top with cream cheese blueberries and the remaining bread. Beat eggs, syrup and milk and pour evenly over bread.

Bake at 350 degrees for 30 minutes or until well done.

My Thoughts

A Hidden Hope by Suzanne Woods Fisher takes us back to Stoney Ridge where we get to catch up with Dok Stoltzfus, Annie, Bishop David Stoltzfus (Dok’s brother), Fern Lapp (a dear), and we cannot forget Hank Lapp (who stills YELLS EVERY WORD). There are some new characters as well. Dok gets a traveling nurse, Evie, and two newly graduated doctors who are ready to do their residency. I liked Charlie, but Wren is a piece of work. I had a feeling that there was a reason Wren chose to come to Stoney Ridge, and it would not make Dok happy. I felt for Dok who is hoping to get her workload lightened with the extra help. Dok cares for her patients and wants them to get the best care. I enjoyed A Hidden Hope from beginning to end. The story is beautifully written with developed characters. There is plenty going on to keep the story lively.

Annie’s mother has not changed her hypochondriac ways, and the two new residents do not help the situation. I like that the author addresses post-partum depression and how severe it can get. Annie has a challenge of her own to overcome and it may affect the plans she has for her future. I like the relationship Dok has with her brother and with her husband. I hope that the author continues to take us to Stoney Ridge for her heartwarming and inspiring stories. A Hidden Hope is a touching tale with EMT training, bothersome residents, a helpful traveling nurse, a basement transformation, twin troubles, wifely advice, a file fiasco, and aiding patients.

Inspiration can strike in the most unexpected places—like a gift shop in Grand Teton National Park. While browsing, I struck up a conversation with a college student who had never set foot outside Alabama until her mom dropped her off for a summer job in the park. One minute, she was home in the Deep South; the next, she was surrounded by towering peaks and moose crossings. Talk about a culture shock.

That conversation lit a spark that eventually became my National Parks Summers series. I couldn’t stop thinking about the fascinating mix of people who work seasonally in national parks. You’ve got fresh-faced college kids on their first big adventure, retirees finally living their bucket-list dreams, and everyone in between. These parks aren’t just natural wonders—they’re crossroads for people from all walks of life, all chasing something unique.

In Capture the Moment, I wanted to explore what happens when people and landscapes collide. Kate Cunningham, a determined zoo photographer, swaps enclosures for the wilds of Grand Teton, chasing an elusive bear and her own sense of purpose. Along the way, Kate meets Grant Cooper, a rugged park ranger with a knack for tracking and a talent for keeping her on her toes.

National parks are more than just beautiful backdrops—they’re places where people find themselves, lose themselves, and sometimes stumble into something extraordinary.

Maybe even love.

My Thoughts

Capture the Moment by Suzanne Woods Fisher is the first novel in the National Parks Summers series. The author transports readers the Grand Teton National Park in Wyoming. I enjoyed the vivid descriptions which allowed me to envision the vistas. I can tell that the author did her research for this story. I enjoyed the facts sprinkled throughout the story about the national park. I liked the main characters, Kate Cunningham and Grant “Coop” Cooper. Maisie, Coop’s granddaughter, was a delight. Her joy was infectious, and she added humor to the story. Frankie, a teenage intern for the summer, was an interesting character as well.

The mystery added another layer to the story. I wish identifying the guilty party had been more of a challenge. Romance was in the air at Grand Teton. Sparks fly between the main characters, but the road to happiness is a bumpy one. I liked that there was a romance between an older couple as well as a youthful crush. I did not find it difficult to follow the various storylines. It did take me a little bit of time to get involved in the book, but, once I did, I could not wait to see how everything turned out. The book has a satisfying ending. In Capture the Moment, the author blended mystery, romance, nature, and faith into one picturesque story.
